Pancakes

For Mother's Day this past weekend, I decided to cook some breakfast for mom and the rest of the family. When I make breakfast I include two staples - bacon and pancakes - everything else rotates. So, I figured I would share how I make pancakes because it is different but amazing!

What follows will not look like a pancake recipe, but trust me, they will come out as the airest (word?) pancakes you've ever tried.
  • 4 Eggs
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon baking soda
  • 1/4 cup cake flour (or standard flour)
  • 2 cups sour cream
  • 3 tablespoons sugar

Mix the eggs in a bowl. Add all the other ingredients into the bowl and mix into a batter. Heat a griddle. Once hot grease it up. Pour either small silver dollar size pancakes or full pancakes onto the griddle. Once they start to bubble up flip them and cook for a little.
